Plain Vanilla/ Chocolate Cupcakes Recipe

At the moment, I am looking for a job, so this means I have a lot of time to spare. Reading, blogging, cooking, you name it, I am basically a 1.50m WONDER WOMAN these days. I while ago I said I`ll make this blog more personal and while I am not ready to post selfies 24/7, I want to let you in on the things I like. I mean, I don`t like, I LOVE cooking and baking, so why not share it with you guys? That`s why, from now on my blog will have a RECIPES section. By no mean I`m the next Martha Stewart and orange is definitely not my colour, but I can show some simple recipes you might enjoy. 

Cupcakes are my favourite dessert after ice-cream, so today I will share with you the easiest way to make plain cupcakes. You don`t need a lot of ingredients and they are ready in less than an hour.


Baking Tray

– Mixer

– Mixing bowl

– Cupcake cases

– Kitchen scale (optional)

– Measuring cups (optional)


– 200 g caster sugar

– 110 g butter

– 2 eggs

– 200 g plain flour

– 1 3/4 TSP baking powder

– 1 TSP vanilla flavouring

– 2 TBSP cocoa powder

– 125 ml milk ( I prefer almond milk, but you can choose either one of them)


Preheat your oven to 180C degrees.In a large bowl, mix the caster sugar and the butter until you get a thick cream. Add one egg, mix for a minute and then add the other egg.Add the vanilla extract/flavouring and keep mixing. On a plate mix the flour with the baking powder. Pour half into your bowl and mix until you can`t see any more flour. Add the rest. Now you will have a very thick paste.You need it creamier, so put half of the milk, mix and then add the rest. If you want to make chocolate cupcakes as well, mix half of the mix with a paste made of cocoa powder and water. Now your mix is ready, so you can pour it into your cupcake cases. Make sure you fill only 3/4 of them because you put baking powder and it will make them grow. Leave for 15- 20 minutes.

( I had only one tbsp of baking powder left, so I had to fill more)


If you want you can make your own icing, but I like to use one from DR. Oetker, it`s easier and tastes good. Decorate with whatever you have in the house and enjoy!

      I could make cupcakes all day, I love them so much. Next step on my TO DO LIST, is learning how to make icing:))
